  • 3 ripe bananas, mashed
  • 1/2 cup (115 g) unsalted butter, melted
  • 3/4 cup (150 g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup walnuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 175°C (350°F) and grease a 9×5-inch loaf pan.
  2. In a large bowl, mash the ripe bananas with a fork until mostly smooth.
  3. Add melted butter, sugar, eggs, and vanilla extract and whisk until well combined.
  4. Stir in the flour, baking soda, salt, and cinnamon.
  5. Mix gently until the batter just comes together.
  6. Fold in walnuts or chocolate chips if using.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50–60 minutes until a toothpick inserted into the center comes out clean.
  9. Let the bread cool for 10 minutes in the pan, then transfer to a rack to cool completely.
  10. Slice and enjoy.

Notes

Use very ripe bananas for the best sweetness and flavor. Avoid overmixing the batter so the bread stays soft and tender. Store the bread in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days. Banana bread slices can also be frozen for up to 2 months.
