Ingredients
1 cup peanut butter (creamy or crunchy)
1 cup brown sugar
1 large egg
1 teaspoon baking soda
½ cup chocolate chips
Instructions
Preheat oven to 350°F (175°C) and line a baking tray with parchment paper.
In a mixing bowl, stir together peanut butter, brown sugar, and egg until smooth.
Mix in the baking soda until well combined.
Fold in the chocolate chips.
Scoop tablespoon-sized portions onto the baking tray, leaving space between cookies.
Bake for 8–10 minutes until golden on the edges and soft in the center.
Cool for 5 minutes before serving.
Notes
Swap peanut butter with almond butter or sunflower seed butter for a nut-free option.
Add a pinch of sea salt on top before baking for extra flavor.
Freeze cookie dough balls for up to 2 months and bake fresh as needed.
