- 300 g rotini pasta
- 2 cups corn kernels
- ½ cup mayonnaise
- ½ cup Greek yogurt
- Juice and zest of 2 limes
- 2 tablespoons olive oil
- 1 garlic clove, minced
- 1 teaspoon paprika or chili powder
- ¾ teaspoon salt
- ½ teaspoon black pepper
- ½ cup crumbled feta or cotija cheese
- ¼ cup chopped fresh cilantro
Instructions
- Cook pasta in salted water until al dente, then drain and cool slightly.
- Heat a pan and char the corn until golden.
- In a large bowl, whisk mayonnaise, Greek yogurt, lime juice, zest, olive oil, garlic, and spices.
- Add pasta, corn, cheese, and herbs to the bowl.
- Toss gently, taste, and adjust seasoning before serving.
Notes
This salad tastes even better after chilling for 30 minutes. If it thickens in the fridge, add a spoon of yogurt or a splash of lime juice. Store in the refrigerator for up to 3 days.
