This creamy ranch pasta salad with bacon is rich, comforting, and perfect for gatherings. Tender pasta is coated in a creamy ranch dressing, mixed with crispy bacon, fresh vegetables, and sharp cheddar cheese for a dish everyone loves.

- 400 g rotini pasta
- 200 g bacon
- 1 cup ranch dressing
- 1/2 cup mayonnaise
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1 cup shredded cheddar cheese
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Cook pasta in salted water until tender. Drain and cool slightly.
- Fry bacon until crispy, then drain and chop.
- Mix ranch dressing and mayonnaise in a bowl.
- Combine pasta with dressing until evenly coated.
- Add tomatoes, onion, cheese, and most of the bacon.
- Chill for 30 minutes before serving.
- Garnish with herbs and remaining bacon.
Notes
This salad tastes even better after resting. Store in the fridge for up to 3 days. Add a little extra ranch if it dries out.
