- 400 g pasta
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup broccoli florets
- 1 carrot, sliced
- 1 zucchini, sliced
- 1 bell pepper, sliced
- 1 cup peas
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- Salt to taste
- Black pepper to taste
Instructions
- Bring a large pot of salted water to a boil and cook pasta until al dente.
- Reserve 1 cup pasta water and drain pasta.
- Heat olive oil in a large pan and sauté garlic until fragrant.
- Add vegetables and cook until tender but still bright.
- Lower heat and stir in cream gently.
- Add parmesan cheese slowly, stirring until smooth.
- Add pasta and pasta water as needed to loosen sauce.
- Season with salt and black pepper and serve warm.
Notes
Use freshly grated parmesan for the best flavor. Add a splash of milk or cream when reheating leftovers. Swap vegetables based on season.
