Description

This Creamy Pasta Primavera with Parmesan Sauce is a comforting yet fresh pasta dish made with colorful vegetables, tender pasta, and a rich parmesan cream sauce. Perfect for family dinners and busy weeknights.


Ingredients

  • 400 g pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 carrot, sliced
  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 1 cup peas
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta until al dente.
  2. Reserve 1 cup pasta water and drain pasta.
  3. Heat olive oil in a large pan and sauté garlic until fragrant.
  4. Add vegetables and cook until tender but still bright.
  5. Lower heat and stir in cream gently.
  6. Add parmesan cheese slowly, stirring until smooth.
  7. Add pasta and pasta water as needed to loosen sauce.
  8. Season with salt and black pepper and serve warm.

Notes

Use freshly grated parmesan for the best flavor. Add a splash of milk or cream when reheating leftovers. Swap vegetables based on season.
