Description

This Creamy Italian Pasta Salad with Vegetables is a comforting yet fresh dish made with tender pasta, colorful vegetables, and a smooth, tangy dressing. Perfect for gatherings, picnics, or easy family meals, it comes together quickly and tastes even better after chilling.


Ingredients

  • 450 g rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup red bell pepper, chopped
  • ½ cup black olives, sliced
  • ½ cup red onion, finely chopped
  • ¾ cup mayonnaise
  • ½ cup Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Cook pasta in salted water until al dente. Drain and cool completely.
  2. Prepare and chop all vegetables evenly.
  3. In a bowl, whisk mayonnaise, Greek yogurt, olive oil, vinegar, seasoning, garlic, salt, and pepper.
  4. Combine pasta and vegetables in a large bowl.
  5. Gently fold in the dressing until evenly coated.
  6. Chill for at least 30 minutes before serving.

Notes

For extra flavor, add parmesan cheese or fresh basil. Store in the fridge up to 3 days. Stir in a little yogurt or olive oil before serving leftovers.
