- 4 cloves garlic, minced
- 3 tbsp olive oil
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 cup grated Parmesan cheese
- 1 tbsp lemon juice
- Salt to taste
- Black pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Cook pasta in salted water until al dente, then drain and cool slightly.
- Heat olive oil in a pan and gently sauté garlic until fragrant.
- In a bowl, mix mayonnaise, sour cream, Parmesan, lemon juice, salt, and pepper.
- Slowly stir the warm garlic oil into the dressing.
- Fold pasta into the dressing and mix gently.
- Finish with parsley and extra Parmesan before serving.
Notes
Let pasta cool slightly before mixing to avoid melting the dressing. Store in the fridge up to 3 days. Refresh with a splash of milk or olive oil before serving.
