- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 medium potatoes, diced
- 2 carrots, sliced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add beef stew meat and brown on all sides.
- Remove beef and set aside.
- Add onions to the same skillet and cook until soft.
- Stir in garlic, paprika, salt, and pepper.
- Return beef to the skillet and add potatoes, carrots, beef broth, and Worcestershire sauce.
- Cover and simmer on low heat for 40–45 minutes until beef is tender.
- Adjust seasoning and serve hot.
Notes
For extra flavor, let the beef brown well before simmering. You can substitute potatoes with sweet potatoes or add peas at the end. Store leftovers in the refrigerator for up to 3 days and reheat gently on the stove.
