These comforting low carb meals bring warmth and satisfaction without heaviness. Inspired by my Greek kitchen, this creamy chicken skillet is rich, cozy, and perfect for family dinners.
Ingredients

- 600 g chicken thighs
- 2 tbsp olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 200 ml heavy cream
- 100 ml chicken broth
- 1 tsp dried oregano
- Salt and black pepper to taste
- Fresh parsley for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken with salt, pepper, and oregano.
- Sear chicken until golden on both sides and remove from pan.
- Sauté onion and garlic in the same pan until soft.
- Add cream and chicken broth, stirring gently.
- Return chicken to the skillet and simmer until cooked through.
- Finish with fresh parsley and serve warm.
Notes
For extra flavor, add a teaspoon of Dijon mustard to the sauce. Store leftovers in the fridge for up to 3 days and reheat gently on the stove.
