  • Salt and black pepper to taste
  • 2 cups cooked brown rice or cauliflower rice
  • 2 cups chopped romaine lettuce
  • 1 cup diced tomatoes
  • 1 ripe avocado, sliced
  • 1 lime, cut into wedges
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and cook until soft and lightly golden.
  3. Add garlic and cook until fragrant.
  4. Add ground beef and cook, breaking it apart, until fully browned.
  5. Stir in cumin, smoked paprika, chili powder, salt, and pepper.
  6. Add a splash of water and simmer for 3–5 minutes.
  7. Prepare rice or cauliflower rice and divide into bowls.
  8. Top with seasoned beef and fresh vegetables.
  9. Finish with avocado, lime juice, and cilantro.

Notes

Store cooked beef separately from fresh toppings for best texture. Swap brown rice for cauliflower rice for a lower-carb option. Greek yogurt works beautifully as a clean substitute for sour cream.
