- 3 cups fresh strawberries, sliced
- 2 cups rhubarb, chopped
- 3/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 cup all-purpose flour
- 3/4 cup rolled oats
- 3/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- In a bowl combine strawberries, rhubarb, sugar, cornstarch, vanilla extract, and lemon juice.
- Pour fruit mixture into the prepared baking dish.
- In another bowl mix flour, oats, brown sugar, cinnamon, and salt.
- Stir in melted butter until crumbly.
- Sprinkle topping evenly over fruit filling.
- Bake for 35–40 minutes until topping is golden brown and filling bubbles.
- Allow the crisp to cool slightly before serving.
Notes
Use fresh rhubarb and strawberries for the best flavor. Let the crisp rest for 10 minutes after baking to allow the filling to thicken. Serve warm with vanilla ice cream or whipped cream.
