Instructions
- Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
- Mix flour, sugar, and salt, then rub butter in until crumbly.
- Press mixture firmly into the pan and bake for 20 minutes.
- Whisk eggs and sugar until pale, then add lemon juice, zest, and flour.
- Pour custard over warm crust and return to oven.
- Bake for 25 minutes until set with a slight jiggle.
- Cool completely and dust with powdered sugar before slicing.
