- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 800 g crushed tomatoes
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt, to taste
- Black pepper, to taste
- 400 g pasta
- 1 cup reserved pasta water
- Grated cheese, for serving
Instructions
- Heat olive oil in a large pot over medium heat and cook the onion until soft and golden.
- Add the garlic and cook until fragrant.
- Add the ground beef, break it apart, and cook until browned.
- Season with salt and black pepper.
- Stir in tomato paste and cook for 1 minute.
- Add crushed tomatoes, oregano, and bay leaf.
- Lower heat and simmer for 30 minutes.
- Cook pasta in salted water until al dente.
- Add pasta to the sauce with some pasta water.
- Stir gently and cook together for 2–3 minutes.
- Serve warm with grated cheese.
Notes
Let the sauce simmer slowly for deeper flavor. You can freeze the sauce for up to 3 months. Add a splash of pasta water when reheating to loosen the sauce.
