- 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 3/4 cups milk
- 2 large eggs
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 3 tablespoons melted butter or olive oil
- 1/2 cup dark chocolate chips
- 1 1/2 cups fresh strawberries, chopped
Instructions
- Preheat oven to 180°C / 350°F and lightly grease a baking dish.
- In a large bowl, mix oats, cocoa powder, baking powder, and salt.
- In another bowl, whisk milk, eggs, honey, vanilla, and melted butter.
- Combine wet and dry ingredients until well mixed.
- Fold in most of the chocolate chips and strawberries.
- Pour mixture into baking dish and top with remaining chocolate and strawberries.
- Bake for 35 minutes until set but still soft in the center.
- Let rest for 10 minutes before serving.
Notes
Use ripe strawberries for best sweetness. This oatmeal can be made ahead and stored in the fridge for up to 5 days. Reheat with a splash of milk for extra softness.
