Description

This Chocolate Strawberry Baked Oatmeal is a cozy, nourishing breakfast made with rolled oats, rich cocoa, melted chocolate, and juicy strawberries. It bakes into a soft, sliceable oatmeal that feels like dessert but fuels your day with comfort and warmth.


Ingredients

  • 2 cups rolled oats
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 3/4 cups milk
  • 2 large eggs
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 3 tablespoons melted butter or olive oil
  • 1/2 cup dark chocolate chips
  • 1 1/2 cups fresh strawberries, chopped

Instructions

  1. Preheat oven to 180°C / 350°F and lightly grease a baking dish.
  2. In a large bowl, mix oats, cocoa powder, baking powder, and salt.
  3. In another bowl, whisk milk, eggs, honey, vanilla, and melted butter.
  4. Combine wet and dry ingredients until well mixed.
  5. Fold in most of the chocolate chips and strawberries.
  6. Pour mixture into baking dish and top with remaining chocolate and strawberries.
  7. Bake for 35 minutes until set but still soft in the center.
  8. Let rest for 10 minutes before serving.

Notes

Use ripe strawberries for best sweetness. This oatmeal can be made ahead and stored in the fridge for up to 5 days. Reheat with a splash of milk for extra softness.
