Ingredients
For the Cookie Bars:
3/4 cup salted butter, room temperature (6 ounces)
1 cup granulated sugar (200 grams)
2 large eggs
1 teaspoon vanilla extract (5 grams)
2 1/2 cups all-purpose flour (325 grams)
3/4 teaspoon salt (6 grams)
1/2 teaspoon baking soda (3 grams)
1 1/2 cups mini chocolate chips (9 ounces)
For the Frosting:
4 ounces cream cheese, room temperature
1/2 cup unsalted butter, room temperature (4 ounces)
1/3 cup cocoa powder (33 grams)
2 1/2 cups powdered sugar (325 grams)
1 teaspoon vanilla extract (5 grams)
2 tablespoons milk (30 grams)
Instructions
Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
Cream butter and sugar together until soft and fluffy.
Add eggs and vanilla, mixing until fully combined.
Stir in flour, salt, and baking soda until just incorporated.
Fold in mini chocolate chips.
Spread dough evenly into prepared pan.
Bake for 30 minutes or until edges are golden. Cool completely.
For frosting: beat cream cheese and butter until smooth.
Add cocoa powder and half the powdered sugar; mix on low.
Add remaining sugar, vanilla, and milk. Beat until light and fluffy.
Spread frosting evenly over cooled bars. Garnish with chocolate chips if desired.
Slice and serve.
Notes
Bars stay fresh at room temperature for 2 days, or refrigerate for up to a week.
Freeze individually wrapped squares for up to 2 months.
For a lighter frosting, add an extra splash of milk.
