Description

Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste
  • 2 cups cooked rice
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 red bell pepper, chopped
  • 1 cup shredded lettuce
  • Lime wedges for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and cook until soft and translucent.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Add ground beef and cook, breaking it apart, until browned.
  5. Season with cumin, paprika, chili powder, salt, and pepper.
  6. Cook for 5–7 minutes until fully cooked and flavorful.
  7. Prepare rice, beans, corn, and vegetables while beef cooks.
  8. Divide rice into meal prep containers.
  9. Top with seasoned beef, beans, corn, peppers, and lettuce.
  10. Cool slightly, cover, and refrigerate.

Notes

Store meal prep boxes in the refrigerator for up to 4 days. Reheat gently in the microwave. You can freeze the cooked beef separately for up to 2 months. Swap rice for quinoa or cauliflower rice if desired.
