- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- Salt and black pepper to taste
- 2 cups cooked rice
- 1 cup canned black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, chopped
- 1 cup shredded lettuce
- Lime wedges for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and cook until soft and translucent.
- Add garlic and cook for 30 seconds until fragrant.
- Add ground beef and cook, breaking it apart, until browned.
- Season with cumin, paprika, chili powder, salt, and pepper.
- Cook for 5–7 minutes until fully cooked and flavorful.
- Prepare rice, beans, corn, and vegetables while beef cooks.
- Divide rice into meal prep containers.
- Top with seasoned beef, beans, corn, peppers, and lettuce.
- Cool slightly, cover, and refrigerate.
Notes
Store meal prep boxes in the refrigerator for up to 4 days. Reheat gently in the microwave. You can freeze the cooked beef separately for up to 2 months. Swap rice for quinoa or cauliflower rice if desired.
