- 500 g ground beef
- 1 cup long-grain rice
- 2 cups water
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons tomato paste
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon cumin
Instructions
- Wash the rice until the water runs mostly clear.
- Cook rice with water and salt until tender and fluffy.
- Heat olive oil in a pan and sauté onion until soft.
- Add garlic and cook for 30 seconds.
- Add ground beef and brown well.
- Season with salt, pepper, paprika, and cumin.
- Stir in tomato paste and cook 2 minutes.
- Divide rice and beef into meal prep containers.
Notes
Store in the refrigerator for up to 4 days or freeze for longer storage. Reheat gently with a splash of water to keep the rice soft. You can add vegetables like peppers or zucchini for variety.
