Description

Ingredients

  • 400 g rotini pasta
  • 200 g thick-cut bacon
  • 3 ears fresh corn
  • 1/2 red onion, chopped
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • Juice of 1 lime
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper
  • 1/2 cup feta or cotija cheese
  • 1/4 cup fresh herbs

Instructions

  1. Cook pasta in salted water until tender.
  2. Cook bacon until crispy and chop.
  3. Char corn and cut kernels.
  4. Mix yogurt, mayo, lime, and spices.
  5. Combine all ingredients gently.
  6. Top with cheese and serve.

Notes
