Description

These Almond Cookies with Spring Decorations are tender, lightly sweet, and filled with almond flavor. Decorated with pastel glazes, edible flowers, and spring-inspired toppings, they are perfect for Easter, brunches, and seasonal celebrations.


Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups almond flour
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice
  • Food coloring, edible flowers, pistachios for decoration

Instructions

  1. Cream butter and sugar until light and fluffy.
  2. Add egg and vanilla and mix gently.
  3. Combine almond flour, all-purpose flour, baking powder, and salt.
  4. Slowly mix dry ingredients into wet mixture.
  5. Chill dough for 15 minutes.
  6. Roll into balls, flatten slightly, and bake at 350°F (175°C) for 10–12 minutes.
  7. Cool completely before decorating with glaze and toppings.

Notes

Do not overbake almond cookies. Decorate only after cookies cool completely. Store in airtight containers with parchment layers.
