- 3/4 cup granulated sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1 1/2 cups almond flour
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup powdered sugar
- 2 tablespoons lemon juice
- Food coloring, edible flowers, pistachios for decoration
Instructions
- Cream butter and sugar until light and fluffy.
- Add egg and vanilla and mix gently.
- Combine almond flour, all-purpose flour, baking powder, and salt.
- Slowly mix dry ingredients into wet mixture.
- Chill dough for 15 minutes.
- Roll into balls, flatten slightly, and bake at 350°F (175°C) for 10–12 minutes.
- Cool completely before decorating with glaze and toppings.
Notes
Do not overbake almond cookies. Decorate only after cookies cool completely. Store in airtight containers with parchment layers.
